This elegant Cabernet Franc displays a dark magenta
color and a full evolving bouquet of ripe black
cherry, vanilla, and cured meats. A balanced structure of
tannins and rich, sweet red fruit, followed by a trace of dry
dark chocolate on the finish.
Clone 45, also known as French 77, is a clonal selection of Chardonnay originally from France's Cote d'Or. The wine was aged in French oak barrels for 9 months, bringing out the aromatic qualities of the grape and adding a vanilla quality.
Our Chardonnay is crushed and de-stemmed immediately to press, then the juice is fermented in French oak barrels. While in barrel, the wine goes through a malolactic fermentation that naturally creates a light buttery flavor and smooth mouth feel.
Aromas of raspberry and cherry with notes of cinnamon spice, vanilla, and clove with a nice touch of oak. The multi-layered flavors of blackberry, juicy cherries, and spice combine well with a long, lingering finish of mixed berry and dried currant.
This single vineyard Cabernet Sauvignon features the very best of the Chalk Hill appelations expression. Deep blackberry and frim tannins give a exciting and vibrant flavor profile and mouth feel to this small production wine.
We use old world techniques, whole berries, and 10 %
whole clusters to make our Pinot Noir in small batches
that we "punch-down" three times a day. After
native yeast fermentation, the wine is aged in French
oak barrels for up to 8 months.
